Virtual Bake with F.L.A.B. Trail - Recipe
Berry Loaf
Ingredients:
1/2 cup butter or margerine
1 cup sugar
2 eggs
1/2 teaspoon vanilla
1/2 teaspoon salt
2 cup flour
1 tablespoon baking powder
1 cup milk
1/4 cup lemon juice (optional)
3/4 cup berries* (cranberries, blueberries, raspberries) fresh or frozen
Note: If you want to use dried berries, soak them in hot water (just enough to cover) for about half an hour and then strain. You can also add alcohol to the soaking water to add flavour.
Essential Utensils:
Oven
Bowl
Measuring Cup
Fork
Loaf pan or muffin tins.
Instructions:
Preheat oven to 350 degrees F.
Grease and flour the loaf pan/muffin tins.
In a large bowl, cream together butter/margerine and sugar with a fork
Beat in the 2 eggs.
Add vanilla and salt, and beat until smooth.
Add one cup flour and beat until smooth.
Add 1/2 cup milk and beat until smooth.
Add remaining flour and the baking powder, beat until smooth.
Add remaining milk and the lemon juice (if using), beat until smooth.
Mix in the berries and stir well.
Pour and scrape batter into prepared pan/tins.
Place pan/tin in centre of preheated oven and bake loaf for 50 minutes, muffins for 25 min, or until toothpick comes out clean.
